According to the manufacturer, 1 tablespoon of dehydrated green onions equals 4 tablespoons of fresh green onions. So if you wanted 1 cup of fresh you would use 1/4 cup of the dried product.

Q: expiration date or shelf life?

I go through about one bottle a year and they still taste good. I have a bottle of the bell peppers I am still using that says they expired in 2018 but they still have their flavor.
